Santaka Supreme Sauce
Mix 1 tablespoon Shaoxing rice wine, ¼ cup balsamic vinegar, ¼ cup soy sauce, 1 teaspoon sesame oil, 1 tablespoon fresh minced ginger, 1 tablespoon fresh minced garlic, and ¼ cup mayo, then finish with 1/4 to ⅛ cup Santaka Sauce. The more you add, the spicier it gets!
Cucumber Roll
Thinly shave 1 cucumber into 1/16-inch slices (paper thin). Lay the slices flat on a cutting board, overlapping each one lengthwise by ¼ inch. Layer with cream cheese, avocado, fried chicken or katsu (or other meat), crispy onions, and Santaka sauce. Roll up tightly, slice into rolls, and enjoy.
Spicy Scallops
In a zip-lock bag or small container, place diver scallops that have been patted dry and add enough Santaka to coat each one completely. Let marinate for 1–2 hours, then remove and sear in oil on a hot pan. Turn down the heat and cook through. Serve over a mandarin salad, Asian slaw, or as the protein in your favorite noodle or rice bowl.
