Little Dos Deviled Eggs

Cook 6 eggs until hard-boiled. Peel and slice the eggs, keeping the whites in two halves. Mash the yolks and mix with ¼ cup mayonnaise, 1 tablespoon yellow mustard, 2 tablespoons Dos Haches, and salt and pepper to taste. Fill the egg whites with the yolk mixture, then top with cubed radish, diced jalapeños, queso fresco, fresh lime, chopped cilantro, and a sprinkle of crushed tortilla chips.

Have fun with your favorite tater tots! At WSC, we like using carnitas. Bake or fry your tots, then top with carnitas, cheddar cheese, crema fresca, pico de gallo, pickled jalapeños, fried onions, and finish with Dos Haches Chili Sauce.

Pork Pastor with Dos Haches

Thinly slice or small dice 5 pounds of pork shoulder and place in a container or zip lock bag. In a blender, combine 1 pack of achiote paste, 1 can of pineapple chunks with juice, ¾ cup white vinegar, ¼ cup Dos Haches Chili Sauce, ½ tablespoon chili powder, 1 tablespoon each of dried oregano (or marjoram), garlic powder, onion powder, ½ tablespoon black pepper, and 1 tablespoon kosher salt. Pour the marinade over the pork and let it rest 2–24 hours. Cook on an oiled hot flat top grill or pan until caramelized and richly colored. Serve in tacos, quesadillas, or however you like for a bold, flavorful Pork Pastor experience.
